How To Make Eggs Au Gratin

First boil the eggs. Place five eggs in a pot of cold water and bring to a boil. Once the water starts boiling, start a times and continue to boil for 10 minutes. Remove the eggs and immediately place in a bowl of cold water (this will stop the cooking process, preventing overcooked eggs).

In the meanwhile, cut the bacon into cubes, and fry in a pan over medium heat until caramelized. Don’t add any butter or oil, as the bacon should have enough fat that will cook out. Pour the tomato sauce in an oven-safe baking dish, then add the cooked bacon pieces. Place the egg halves on top of the bacon, with the cut-side facing down.

Finish it off with the cheese slices, oregano, and seasoning. Bake for 5 minutes or until the cheese has melted.

Tips For Hard-Boiled Eggs Gratin

Make sure to use a ketchup style sauce and not concentrated tomato sauce. If you only have concentrated tomato sauce or puree, it might be necessary to add a teaspoon of sugar to offset the acidity.

Feel free to use your favorite cheese for this recipe. Mozzarella, Swiss cheese, and Monterey Jack will all work well.

If you prefer, you can add a white béchamel sauce to the Eggs Au Gratin. Add it on top of the eggs, just before the cheese, before baking.

How To Store Eggs Au Gratin

The Eggs Au Gratin should be served and enjoyed immediately, however leftovers can be stored in the fridge for up to 2 days. Reheat in the microwave before serving.

Tomato sauce
180 ml (2/3 cup)
Cheese

Dried oregano

Instructions

Place 5 eggs into cold water and cook for 10 minutes after the water reaches the boiling point.

Put eggs into an ice bath immediately and allow to cool.

Peel the eggs and slice them in half.

Cut the cheese slices in half.

Slice the bacon into cubes.

Cook the bacon in a dry pan until golden brown.

Pour tomato sauce into an oval baking pan.

Add the cooked bacon.

Place the egg halves on top, with the cut-side down.

Top with the cheese slices, then season with oregano and pepper.

Bake at 180C/350F for 5 minutes.

Notes

If you’re using lean bacon, it might be necessary to add a small amount of fat to the pan.
