Looking for an easy recipe for breakfast that can double as brunch too? This Frittata Toast is just what you need. It’s easy to make, high-protein, and perfect for making for a larger crowd. It’s a great breakfast option for busy mornings.

To make it, you need bread, butter, eggs, milk, ham, and cheese. Simply toast the bread, top with ham and cheese, and dip in the egg. Bake until golden and enjoy! You can even customize it as you want, so make sure to check out our tips below.

Tips

Make sure to use thicker slices of bread. Thin slices will break apart too easily. Day-old bread will also work better.

To make it meatier, add crumbled sausage meat, cooked bacon, smoked chicken breast, smoked salmon, or tuna.

Make it cheesy by adding feta cheese, goat’s cheese, or Gruyere.

To make it more nutritious, you can add vegetables: wilted spinach, roasted red peppers, or caramelized onion will all work.

To make a vegetarian version, you can leave out the ham, and use sautéed mushrooms instead.

For a delicious twist, use toasted waffles instead of toasted bread.

How to serve Frittata Toast

Serve the Frittata Toast with a hollandaise sauce, mustard, or ketchup, and a side salad. If you like the combination of sweet and savory, serve the toast with a fruit compote, whipped cream, and a drizzle of honey.

How to store Frittata Toast

Store leftovers in the fridge for up to 3 days. To make Frittata Toast ahead of time, fill the toast sandwiches the ham, and cheese, then wrap them in plastic wrap, then foil. Store them in the refrigerator for up to 1-2 days. Once you are ready to eat, dip the sandwiches in the egg mixture and bake.
