These quick and easy potato fritters make a great side!

INGREDIENTS

500 g (1 pound) potatoes, peeled;

4 tbsp flour;

4 tbsp cheese, shredded;

1 egg;

1 small onion, chopped;

1 garlic clove, minced;

½ tsp (each) salt and chili powder;

4 tbsp vegetable oil.

METHOD

Shred peeled potatoes using the largest grater you have.

Rinse potatoes and squeeze them dry.

Combine shredded potatoes with salt, chili powder, egg, cheese, flour, onion, and garlic.

Heat 4 tbsp of vegetable oil over medium heat and fry fritters for about 4 minutes on each side or until golden and crispy on the outside but soft in the middle.

Serve right away with your favorite sauce.
