Greek Zucchini Feta Bake: a delicious recipe

2 medium sized, cut in to ¾ inch slices
Onion
1 large, peeled and chopped
Oregano
½ teaspoon

Black pepper powder

1 teaspoon
Yogurt
½ cup, plain low fat
Flour
½ cup
Feta cheese
200g , cubed or crumbled
Fresh parsley
1 tablespoon , finely chopped
Paprika
½ teaspoon

This recipe vegetable bake is really quick, simple, and really tempting. It is the perfect dish that you can prepare this winters and enjoy a pretty wholesome and filling meal loaded with the goodness of zucchini and feta cheese.

Serve it as a side along with meats of your choice or as a main dish along with some buttered toast to comfort your tummy and the soul. Bon appetit!

Instructions

In a pan heat the oil. Stir in the sliced zucchini and onions. Cook the vegetables for about 2 minutes and then add oregano to it. Cook the vegetables until zucchini is crisp-tender. Season with salt and black pepper powder.

Preheat the oven to 175 degrees C. In a bowl, add the eggs, baking powder, yogurt, flour, and whisk them all very well. Cool the vegetables in the pan and then add the feta cheese to it. Pour egg mixture and parsley to the vegetables and mix them well.

Transfer the vegetable mixture to a baking dish. Sprinkle the paprika evenly on top of the vegetables and then bake it uncovered for about 30 minutes or until golden brown on top. Serve hot and enjoy!

Tips

Make sure that the egg is free from any egg shell. You may also prepare the vegetable mixture in advance and then bake them when you plan to serve them.
