Greek zucchini fritters are an incredibly delicious  fried appetizer that you can make in no time. Delightfully crispy on the outside and soft on the inside, Greek zucchini fritters are a simple and healthy dish that boasts plenty of flavor. The recipe is called Kolokithokeftedes in Greek and hails from Crete, the largest of Greece's many islands. This traditional dish calls for tasty feta and a variety of fresh herbs, giving the fritters a wonderful, vibrant flavor. It's especially well-suited to warm weather, but they're so good, don't be surprised if you find yourself making Greek zucchini fritters all year long!

How to Fry Greek Zucchini Fritters

Hold off on using the deep fryer – pan-frying your fritters is the healthy way to go. It also uses much less oil, which means you won't wind up with sodden fritters. Extra virgin olive oil is the best option for this recipe. It's nutrient-rich and full of healthy fats, unlike other oils such as canola, corn, or sunflower oil.

How to Serve Greek Zucchini Fritters

These vegan and vegetarian-friendly fritters are fantastic as appetizers. Serve them with tzatziki and a spritz of lemon, or a dollop of Greek yogurt. You can also add them to a Greek salad to make a delicious light meal.

How to Make Greek Zucchini Fritters

Grate the whole unpeeled zucchini with a box grater. Place the grated zucchini into a colander and add salt. Let it sit for about 10 to 15 minutes, then squeeze out the water.

Put zucchini, feta, onion, herbs, and eggs into a large bowl, mixing well to combine. Mix in breadcrumbs.

In a small bowl, combine the flour and baking soda. Gradually at it to the zucchini mixture until it thickens. Place extra flour on a separate plate.

Heat a medium-sized skillet over medium-high heat. Pour in enough olive oil for it to fill about 1/3-inch of the skillet. Take a tablespoon of the zucchini mix and put it in the flour to coat.

Repeat until you have enough fritters to fill the pan while leaving a little bit of room to help the fritters cook evenly. Using a spatula, gently flatten the fritters. Fry for 2 minutes on each side.

Remove the fritters from the oil and place them on a paper towel to drain. Serve immediately.

Notes

  • You can make this healthy recipe even healthier by baking the fritters instead of frying them. Simply preheat your oven to 400°F. Line a baking tray with parchment paper, then place a rack on the tray. Position the fritters on the rack and bake for 30 minutes, flipping halfway through.
  • If you bake the fritters, placing them on a rack helps the air to circulate, keeping them lovely and crispy.
  • If you don't have fresh herbs on hand, swap them out for dried herbs. Just half the amounts called for in this recipe.
  • These fried zucchini fritters are best enjoyed while hot, but taste good cold, too.
