The lemonade base is a concentrated solution based on fresh lemons, sugar and water. Simple and extremely versatile, it is the perfect starting point for making a fresh and thirst-quenching drink, ideal for hot days, simply by adding water, sparkling water or soda; but you can also use it for delicious and genuine desserts such as popsicles, slushes and sorbets. Let's see together how to prepare the base for lemonade, preserve it and make the best use of it.
How to prepare the lemonade base
Wash the lemons thoroughly and dry them with a kitchen towel. Cut them in half and, with the help of the juicer, make the juice; you will need 250 ml (1). Filter it to eliminate any seeds.
Collect the sugar in a saucepan and add the lemon juice (2).
Also pour the water into the saucepan (3).
Put the saucepan on the flame and stir with a wooden spoon (4). Meanwhile, make some small pieces of lemon zest, taking care not to include the white part under the peel, and also add these to the syrup while cooking.
Cook, stirring constantly, until the mixture starts to thicken and nice bubbles appear (5).
Filter your base through a dense mesh strainer and pour it into a sterilized bottle (6).
Mix 1 part of lemonade base and 4 of water (7), then close and refrigerate until cool.
Pour the fresh lemonade into individual glasses, garnish as desired with a few lemon wedges and serve (8).
With these doses you will get about 500 ml of lemonade base. You can prepare a lot of it, pour it into bottles, previously sterilized, and preserve it in the refrigerator. Lemonade base can be preserved for up to 1 month.
