Take a bowl and add the shredded cheddar cheese to it. Top the cheese with softened cream cheese and whisk the ingredients using a fork or a whisk for 5 minutes or until the mixture is well blended and smooth in consistency. Blend in the mayonnaise, finely chopped spring onion, tomato ketchup, and chili sauce until the mixture is well combined. Stir in the pimento and mix well. Tips

Use a fork or a whisk to whip up the cheese and cream cheese mixture. If using a hand blender try to rotate the blades in one direction only. You may also crush the pimentos to a fine paste and then add to the dip to get an even smoother consistency of the dip. You may store this dip in a refrigerator for up to 5 days in a sealed container. Add a few sprigs of freshly chopped cilantro leaves to add a fresh zing to the dip.
