A sophisticated cake, soft and with a very appetizing appearance, there is no one to resist it, that is why it is very popular, totally recommended to serve it on special occasions, birthdays, romantic dinners, important social events and of course at Christmas. There are many varieties of cheese cakes, with different names, made in the oven or without it, with different types of cheese, etc. This is one of my favorites and I have wanted to share it with you because I am sure that you will love it and that you will enjoy it during its preparation and then you will be amazed to taste it. It is among the most desired desserts in the world, so be sure to prepare this recipe when you want to start sighs!


For the Crust

Preheat the oven to 325F. With the food processor grind the chocolate cookies until they become crumbs. Mix the crumbs with the four tablespoons of butter and the two tablespoons of sugar and vanilla essence. Mix with a spoon or by hand until all the ingredients are well mixed. Prepare a 9-inch removable ring mold (springform pan) and cover the bottom and edges with butter. Put the crumbs in the bottom of the mold and press firmly against the bottom of a mold. Do not press too hard so that all the crust is the same thickness. Bake for 12 minutes and remove from the oven and let cool.

For the Filling

Meanwhile, beat cream cheese, 1 cup sugar, cornstarch, baking powder and vanilla in large bowl with an electric mixer. Add the eggs one by one; After adding each one, beat at low speed only until mixed. Pour the mixture into the base of the cake. Bake the cheesecake 55 min. or until the center is almost set. Pass a knife or metal spatula over the edge of the mold to peel the cake; let it cool before removing the ring from the mold. Refrigerate for 4 hours.

For the Topping

In an electric mixer, mix the cream with the sugar, the orange juice and the vanilla essence. If you want you can add a little more sugar. Cover the cheesecake with this mixture and refrigerate for another half hour. Finally remove from the fridge and make hearts; this is quite simple, place a generous drop of syrup per heart poop, arrange the drops concentrically; Finally, press and drag each drop of syrup with a toothpick to form the hearts. You must be careful, you can practice first making syrup hearts on a plate. They are simple to make and with an adorable result.
