The turkey tidbits with zucchini, raisins and pine nuts are a light and nutritious second course but equally satisfying and full of taste. The turkey meat, delicate, lean and particularly digestible, is cut into bite-sized pieces and then sautéed with zucchini, left slightly crunchy to enjoy all the fragrance, toasted pine nuts and dried raisins. A simple and refined alternative that has the advantage of being cooked in a single pan and limiting cooking time to a minimum. Perfect, therefore, for the summer season and for when you come home late after a busy day of work.

How to prepare turkey tidbits with zucchini, raisins and pine nuts

Cut the turkey breast into cubes about 2 cm 1.

Quickly pass them in the flour 2.

Wash the zucchini, trim them and cut them into cubes 3.

In a non-stick pan, toast the pine nuts until they are golden brown 4.

Soak the raisins in warm water for at least 15 minutes 5.

In a pan, heat a drizzle of oil, add the turkey tidbits and cook them over high heat until they are golden brown on all sides. Add the white wine and let it evaporate 6.

Add the zucchini and raisins 7 and continue cooking for another 10 minutes; the zucchini should remain slightly crunchy. Season with salt and then add the toasted pine nuts and sprigs of oregano.

Distribute the turkey in serving dishes, season with a freshly ground pepper and serve very hot 8.

Preservation

The turkey tidbits with zucchini, raisins and pine nuts can be preserved in the refrigerator for a maximum of 1-2 days, placed in a special container with an airtight seal.
