Keto Chicken Salad: Combine shredded chicken, arugula (rocket), bacon, and cherry tomatoes. Drizzle with a high-fat avocado dressing. Simply blitz the following in a food processor: juice from one lemon, 2 Tbsp olive oil, 1 avocado, salt and pepper.

Simply combine 3 cups rotisserie chicken (shredded), one can creamed corn, 2 cups cheddar cheese, ½ cup cream, and spring onions. Cover with breadcrumbs and bake at 220°C/425°F for about 20 min.

Keep phyllo pastry in your freezer. This way you can easily whip up a Chicken Pot Pie in no time. Simply sauté onion and make a white sauce (bechamel). Add 3 cups of the rotisserie chicken and 2 ½ cups frozen vegetables (mixed). Spoon into ovenproof dishes, and place a sheet of pastry over the dish. Bake at 220°C/425°F for 10 min until the pastry is golden brown.
