One of the best ways to end a good meal or dinner, is definitely with a delicious dessert that besides having a great flavor, has an impeccable presence; in this recipe the combination of flavors, its surprising texture and its elegant appearance make it a wonderful sweet, the Tiramisu is of Venetian origin, its name is derived from the word "te tira su" and is translated as "get up". In the making of tiramisu you can experiment with a wide variety of flavors and get different and delicious results, today we will merge it with speculoos cookies, a Belgian Christmas specialty that has an unmistakable spicy caramel flavor, which will give this dessert a flavor special. Go ahead and prepare it at home, I hope you like it.

Instructions

In a food processor grind all the speculoos cookies; so that the result is the optimum, you must grind the cookies in batches. If you want a more consistent result you can chop the cookies with your hands. Dilute the sugar with the coffee; The next step is to soak the cookies in the cafe for at least one hour. Remove with a spoon, you must obtain a mixture of pasty consistency.

Put two generous tablespoons of this mixture in a glass, this is the base of the Tiramisu. Separate the whites from the yolks of the eggs. With a hand blender, mix the mascarpone cheese, the egg yolks and the sugar until you get a creamy mixture. The mixture must be sparkling and unctuous. In a saucepan, melt the chocolate with the pear syrup and a spoonful of butter.

When the chocolate is melted, add the fresh cream and mix thoroughly.
